Vegan Mayonnaise

This easy no-egg mayo is quick to prepare and can be used in place of traditional mayonnaise as a spread, in salads or meal accompaniment.

MAKES: 1 large cup
Halve quantities listed below for a smaller required portion of mayonnaise.

1 Tub (300g) of Earth Source Foods Silken Tofu
4 Tablespoons olive oil
6 Tablespoons sunflower or safflower oil
4 Tablespoons lemon juice
4 Teaspoons white vinegar
1 Teaspoon salt
1 Teaspoon sugar

Mix all ingredients together in a blender for half a minute or until smooth. Use freshly made, or store in the fridge in a sealed container for up to 3 days.
