Tofu Avocado Smash

Popular in cafes, smashed avocado usually includes feta but this tangy dairy-free version will please any palate. Perfect on crusty toast, as a dip with corn chips or even on top of a baked sweet potato* for a mouth-watering vegan meal. 

INGREDIENTS:
1/3 Pack Earth Source Foods Soft Tofu or Momen Tofu
1 Ripe avocado
3 Tablespoons chopped jalapeno chillies
1 Small tomato finely diced
1 Small bunch coriander chopped
1 Spring onion finely chopped
1 Clove garlic crushed
1/4 Teaspoon chilli powder or paprika
Juice of 1 lime or half a lemon  
Salt and pepper to taste

METHOD:
Drain tofu and place in a bowl, mash with a fork. Add avocado and continue smashing and mashing. Add all other ingredients, stir and smash through. So simple, so delicious. 

SERVING SUGGESTION:
Serve with sliced raw vegetables, pita bread and wafer biscuits, or delicious spread on warm toast. or served as a side with lunch, breakfast or dinner.
