Traditionally made with Paneer cheese, Soft tofu is an excellent substitute for this dish, with its similarities in texture and clean, fresh taste. An incredibly healthy dish, this can be accompanied by a variety of condiments to create a fragrant yet very simple vegan meal. 

MAKES: 4 Serves

PREPARATION TIME:
25 minutes

INGREDIENTS:
Spiced Tofu
1 Tub Earth Source Foods Soft Tofu
1/2 Tsp garam masala
1/4 Tsp salt
1/2 Tsp cumin
1/2 Tsp cayenne pepper
1 Tsp savoury yeast flakes
Oil for frying 

Coconut Cream Spinach Sauce
3 Cups washed chopped spinach
2 Tomatoes chopped
1/2 Cup organic coconut cream
1 Tbsp grated ginger
3 Cloves garlic crushed
1/2 Tsp garam masala
2 Tsp sugar
1 Tbsp ground sunflower seeds
1/2 Tsp salt
1 Tsp savoury yeast flakes
Water for thinning as needed

METHOD:

Drain and chop the soft tofu into 1cm cubes. Mix the garam masala, salt, cumin and cayenne in a bowl and toss the Momen through until coated. Heat oil in a frypan and fry cubes until browned and fragrant. 

Place all the sauce ingredients except water into a food processor and mix until really smooth. 

Pour the spinach sauce into the frypan over the tofu. Cook for about 10 minutes stirring frequently. Add extra water if needed. 

Taste for seasoning. 

TO SERVE:
Serve with cooked rice or quinoa, a drizzle of coconut cream, sweet chutney and papadums. Delicious!
