Sweet & Sour Tofu

A tasty re-invention of a classic Chinese restaurant favourite to set your taste buds tingling. The winning interplay of sweet and sour flavours, present in a lot of Asian cooking, is complemented here with the light salt-spice coating of the pre-prepared Southern Fried Tofu. Quick, easy, tasty!

MAKES: 2 Main meal servings

PREPARATION TIME: 20 minutes and
10 minutes preparation time for the Southern Fried Tofu

INGREDIENTS:
1 quantity pre-prepared Southern Fried Tofu - click here for recipe
1 Small onion or three green spring onions
1 Clove garlic crushed (optional)
1 Red or green capsicum
1 Tablespoon tomato paste
2 Tablespoons sugar of choice
(coconut, brown, raw or even maple syrup)
½ Teaspoon ground ginger
½ Teaspoon chilli flakes
½ Teaspoon Chinese five spice
2 Tablespoons tamari or soy sauce
2 Tablespoons white vinegar
1 Tablespoon vegetable stock powder or 1 stock cube
1 Can pineapple chunks in natural juice
2 Tablespoons oil for cooking

METHOD:
Chop the onion, crush garlic and slice capsicum. In a wok heat some oil and combine onion, garlic and capsicum cooking over high heat, stirring frequently for a minute. Add tomato paste and cook for another minute stirring. Add sugar, ginger, chilli flakes, chinese five spice, tamari/soy, white vinegar and stock. Add the pineapple and juice. Cook until sauce thickens. It should taste rich and sharp. Combine the Sweet & Sour sauce mix with the pre-prepared Southern Fried Tofu pieces - or alternatively, keep separate to serve.

SERVING SUGGESTION:
Serve with rice or noodles. Add sesame seeds or extra spring onion to garnish.
