This tofu dessert is deliciously light, tangy and easy to prepare.
MAKES: 2 Dessert servings
1 Tub Earth Source Foods Silken Tofu
½ Cup peeled finely slivered fresh ginger
¾ Cup sugar
1 Cup water
Peel the oranges with a sharp knife, removing the bitter white pith.
Holding the oranges over a bowl, cut in between the membranes to release the sections and reserve.
Combine the sugar, ginger and water in a saucepan. Bring to the boil over high heat, then lower the heat, cover and simmer for 5 minutes.
Gently place the tofu block into the ginger syrup. Cover and simmer very gently over low heat to infuse the tofu with the ginger flavour (10 mins). Be careful not to overheat or boil so as not to dissolve the delicate tofu. Allow to sit to cool for a few minutes.
Using a spatula or large spoon, scoop tofu carefully into 6 small, shallow bowls. Spoon over the ginger syrup, along with some of the ginger slivers over each serving of tofu. Garnish the tofu with the reserved orange sections and serve warm or cold.
Can be made ahead and refrigerated overnight.
